Vegeterian Tips: When people think of Japanese food, they think of sushi, however sushi doesn t always have to be raw fish. Cucumber rolls are available on many menus, and if there is a sushi bar available, you can ask to try different types of vegetarian rolls, such as cucumber, cream cheese, and avocado, or perhaps vegetarian tempura rolls.

Ingredients (use vegan versions):

  • 2-3 tablespoon / 45 ml plum paste
  • 1/2 cup / 5 oz. thawed blue berries
  • 1/2 cup / 5 oz. frozen blue berries
  • 2-3 tablespoon / 45 ml extra virgin olive oil
  • 1 orange juice box

Directions:

Combine thawed blueberries, tofu and
plum paste in a blander. Put in oil
and combine again. Add thawed
blueberries and combine. Add frozen
blueberries and combine. (They”re kept
frozen so they would get cut up as
much so there”s actually some
blueberries chunks in it. Pour orange
juice in a bit of a time until yoghurt
doesn”t taste tofuy. Drink rest of
orange juice box and toast yourself,
you”ve just made excellent yoghurt
cruelty – free.
