Vegeterian Tips: Eat a dark green vegetable broccoli, spinach, kale, collard greens at least three times a week. These nutritional powerhouses are packed full of vitamins such as calcium and iron. Ingredients (use vegan versions):

  • 1 onio
  • 1 stalk of celery
  • 1-6 potatoes (more if you want heartier soup, leftovers may be used)
  • water
  • small bunch of parsley or dill or both, to taste, may be dried
  • 1/3 cup flour
  • bay leaf

Directions:

cook and mash potatoes, set a side.
Chop onion and celery, then saute in pot with margirine or
oil. Once celery is soft and onions slightly limp, stir in
flour. Once fully incorparted, use a whisk and add enough
water so soup has 1/2-3/4 the final volume you want. Now
add bay leaf and dill or parsely or both. Let sit until
boiling. Add mashed potatoes and stir, reheat and serve

This soup is great. Try adding a bit of vineger, low fat
yogurt or soy cheese or all three really changes the taste.
This is a great soup to make when you”re low on grocies. I have
fed four on this soup using only 1/4 of an onion and one
potatoe and no one walked away hungry. This soup is a meal in
itself and truly easy. I am a teenager and the only veggie
in my home. I make this all the time and it is enjoyed by
all!
