Vegeterian Tips: Take a vitamin supplement that contains B12 or include nutritional yeast in your diet regularly, especially if you re vegan or mostly vegan.

Ingredients (use vegan versions):

  • 16oz. mostaccioli
  • 1/2 Cup olive oil
  • 1 1/2 Cup white vinegar
  • 3/4 Cup vegan sugar (I use less)
  • l teaspoon pepper
  • l teaspoon salt
  • 1/2 teaspoon dry vegan mustard
  • l teaspoon garlic
  • l tablespoon parsley flakes
  • 1 lg. cucumber (end cut off) peeling left o
  • l lg. red onion(garnish)
  • sliced black olives(garnish)
  • tomatoes (garnish)

Directions:

Serves 10.

Cook the noodles according to package directions. Blend all
ingredients except the red onion. Pour over the cooled noodles.
Garnish with sliced black olives, tomatoes and the red onion.
