Vegeterian Tips: Reduce your refined sugar intake. I ve got as much of a sweet tooth as anybody, but I try to keep it under control by using such sugar replacers as maple syrup, stevia and agave whenever possible such as in coffee and tea and indulging in the refined stuff only occasionally.

Ingredients (use vegan versions):

  • 1 lb. of brussels sprouts,
  • 1/2 lb. peas
  • 4 ears of corn, scrape off cor
  • 3 scallions
  • 2 heads of romaine lettuce
  • 1 avocado
  • 1 fresh lemo
  • 1 teaspoon Mrs. Dash seasoning
  • 1/2 cup olive oil

Directions:

Steam brussels sprouts, peas & corn. Chop raw
vegetables in salad bowl, 3 scallions, 2 heads of
romaine lettuce, & 1 avocado. Make a salad
dressing of juice of 1 lemon 1 tsp. of Mrs. Dash
seasoning, & 1/2 cup of olive oil. Mix.

Serves: 4
