Vegeterian Tips: Take a vitamin supplement that contains B12 or include nutritional yeast in your diet regularly, especially if you re vegan or mostly vegan.

Ingredients (use vegan versions):

  • 1 pkg of organic angel hair durum pasta
  • 1 lb fresh organic baby spinach leaves or Swiss chard
  • 1 medium organic Vidalia or sweet yellow onio
  • 3 teaspoons (or to taste) minced organic garlic
  • 1-1/2 tablespoons olive oil
  • 1 tablespoon sesame or walnut oil
  • sea salt to taste (optional)

Directions:

Cook pasta al dente according to
package directions or to desired
tenderness (about 3 to 5 minutes).
Remove from heat and drain. Set aside

Slice onion into rings. Heat 1-1/2
tablespoons olive oil over medium low
heat add onion rings. Saute onion
rings until translucent. Add minced
garlic stir about 1 minute over heat.
Add spinach leaves and stir until
bright green (do not over cook).
Remove from heat. Add pasta, sesame or
walnut oil to spinach and toss lightly
together. Salt to taste (optional)

Serve immediately as a side dish or
light meal.
