Vegeterian Tips: Many upscale food chains have either one or the other, or both salad and soup bars. Salad bars are great for vegetarians, but be careful not to overload on dressings, croutons, nuts, or cheese. Be sure to check with your server about the soups available and that they are bean based, with no meat. If there is nothing else available, salad and soup bars can make a hearty and tasty meal.
Ingredients (use vegan versions):
- one package of vegan substitute chicken strips
- one medium sized tomato
- one bell pepper (any color)
- PAM spray
Directions:
1) Slice the tomato into several pieces.
Make sure they are not too large. Wash
the seeds and juice out. Drain excess
water in a strainer.
2) Slice the pepper into several pieces.
3) Spray a pan with PAM and turn the
stove on, letting it get hot.
4) Meanwhile, cut the package of
vegan substitute chicken in half.
5) Put the substitute chicken directly
on the pan. Because the pan was heated,
the “chicken” will cook immediately.
6) Use a spatula to shuffle
the “chicken” in the pan for 1-2
minutes, or until it is a little
browned.
7) Just before the “chicken” is almost
fully cooked, throw the tomato and
pepper on the pan. Shuffle the
ingredients together for 30-60 second.
8) Turn the stove off and serve.
