Vegeterian Tips: Take a vitamin supplement that contains B12 or include nutritional yeast in your diet regularly, especially if you re vegan or mostly vegan.

Ingredients (use vegan versions):

  • butter beans (dry)
  • wate
  • large can chopped tomatoes
  • small can chopped green chilis
  • garlic peppe
  • crushed red peppe
  • coarse ground black peppe

Directions:

I made these the other day when I desperately needed to go to the grocery store but didn”t
have the time. Turned out quite yummy and even my non-vegan parents loved it and have
requested it again.

Put beans in crock pot in the morning with enough water to cover them and to make juice.
Cook all day on low. When you get in from work, add tomatoes, chilis, and
seasonings. (You may want to take some of the bean juice out) Let sit a bit to allow
flavors to blend and serve.

I served with oven roasted potatoes, carrots, and onions and a green salad. This makes a
great McDougall dish for any of you that are on his program.
