Vegeterian Tips: Eat the rainbow! Fruits and vegetables all contain different nutrients. A simple way to remember to eat a range of vitamins and minerals is to vary the colors of the vegetables you eat. Of course, greens are always good, but try eating a rainbow of tomatoes, yellow squash and purple cabbage!
Ingredients (use vegan versions):
- Firm baking potatoes
- Vegetable oil
- No-stick spray
- Salt
- Cayenne
- Other seasonings
Directions:
Preheat oven to 400 F.
Spray a large cookie sheet well with no-stick spray.
Cut potatoes into french-fry shape pieces.
Place potato pieces into a ziplock bag.
Add 1 tsp vegetable oil for each pound of potatoes.
Close bag (be sure it”s really sealed, or it”s
Kitchen Cleanup Time!).
Shake well to cover potato pieces completely with the
vegetable oil.
Arrange potato pieces in a single layer on the cookie sheet.
Bake about 1 hour, or until pieces are nicely brown and
crisp.
(For added crispness, you can turn them at the half-way
point.)
Sprinkle potatoes with salt, cayenne, and/or other
seasonings, and serve.
Excellent with a tomato-based dip!
