Vegeterian Tips: Most restaurants nowadays have vegetarian options available right on the menu. If not, ask your server if there is something that can be made for you. If you are at a more upscale restaurant, the chef will most likely be willing to whip up something for you, as it shows their talents and feeds their ego.
Ingredients (use vegan versions):
- 5 potatoes (peepeld)
- 1 cup of washed/cut up spinach
- 2 tablespoons olive oil
- 1 small onion (chopped)
- 1 teaspoon paprika
- 1 teaspoon garlic salt
- 3 Bay leaves
- 2 tablespoons non-hydrogenated vegan margarine
- salt and pepper as needed
Directions:
Boil water with 1/2 tablespoon of olive oil and bay leaves.
Add potatoes. Meanwhile, sautee the onion in the remaining
oil and 1/2 of the paprika until it has softened and has
brown edges. When potatoes are almost done add the spinach
to the boiling water. Boil until spinach becomes limp and
drain. Remove and throw out bay leaves. Return to pan, add
sauteed onions rest of paprika, garlic salt, and
margarine(?. Add salt and pepper to your liking.
