Vegeterian Tips: If you know you are going to be eating at a certain restaurant on Saturday night, call ahead and ask if they offer any vegetarian entrees. If the answer is no, ask if something can be prepared for your dietary needs. Most likely, the answer will be yes.

Ingredients (use vegan versions):

  • green cabbage
  • red potato
  • onio
  • seasonings of your choice
  • brown vegan mustard (optional)

Directions:

Cut the cabbage into about 1/4 to 1/2 inch strips (doesn”t
have to be exact). Cut the potato into smallish cubes.
Slice the onion into medium sized pieces. Put all of it
into a saucepan with about 1/2 inch of water. Boil it all
for as long as it takes to cook the potatoes to your liking.

I don”t have exact amounts because you can use as little or
as much as you like to serve your particular fancy. I used
about half a head of cabbage, one potato, and half an onion
for 1 large serving or 2 small ones. Season as you like —
I use a little salt and some Mrs. Dash. I like to eat this
with brown mustard but you don”t have to. Enjoy!
