Vegeterian Tips: There are many different options at Mexican restaurants, including burritos, tostadas, enchiladas, tacos, nachos, and veggie fajitas. Most food options can be prepared vegetarian by substituting beans for beef without a problem.
Ingredients (use vegan versions):
- 1 large yellow onion
- 2 cloves of garlic
- ¼ – ½ tablespoon curry
- ¼ – ½ tablespoon paprika powde
- ¼ – ½ tablespoon bazilica
- ½ cup green lentils
- 1 piece of vegetable bouillon
- 4 large potatoes
- 1 drop of chili sauce
- 1 drop of ketchup
- ¾ cup of wate
- oil
Directions:
1. Chop onion and fry with a drop of oil. Press the garlic and stir into the chopped
onion. Add curry, basilica and paprika.
2. Add the water and the piece of bouillon. Stir.
3. Add the lentils, and cook for a few minutes.
4. Cut potaoes into small pieces. Add to the casserole.
5. Cook until potatoes and lentils are ready.
6. Serve hot over rice.
