Easy Zucchini and Potatoes

Vegeterian Tips: Water water water! It s been said over and over again for a reason because its true! Most people don t drink nearly enough. Bring a water bottle with you wherever you go and invest in a simple filter for your home. Water is especially important when adjusting to a new way of eating, as it will help curb any cravings you may experience.

Ingredients (use vegan versions):

  • 3 medium sized potatoes ( I prefer red potatoes)
  • 2 large zucchini
  • 1 large onion (less may be used but I love onion)
  • 1 medium sized tomato
  • 1 can of corn ( not required but adds a nice touch!)
  • 1 cup uncooked brown rice (wild rice may also be used if preferred)
  • olive oil (amount is up to you)
  • garlic powder (amount is up to you)
  • onion powder (amount is up to you)
  • salt (amount is up to you)
  • water

Directions:

I like easy, cheap recipes that
consist of easy to find ingredients
that are usually laying around the
house! And this one is one of my
favorites!

Begin to cook rice first as it takes
approximately 45 minutes to fully cook. For 1 cup of rice, add two cups of
water. Garlic powder and salt may be
added for flavoring. Heat on high and
stir until boiling and then reduce
heat and cover tightly. Simmer for 45
minutes without stirring or lifting
the lid.

While the rice is cooking, begin to
slice the onion keeping it in rings
and then halving the rings (personal
choice…may also be chopped but I
prefer longer pieces as opposed to
chopped pieces). Simmer in oil (amount
of oil is up to you and your personal
preference) and chop and add tomato.
Simmer until the onion is somewhat
tender.

Slice potatoes (you may also cut them
into small pieces, but I like them i
slices) and add them to the onions and
tomatoes. You may or may not want to
add more oil and I usually like to add
in some water so the potatoes can begi
to cook. At this point, I add the
garlic powder, onion powder, and salt.
I add a good amount of them…I love
the flavors garlic and onion powder
give but you may add as much as you
desire. Cover.

Allow the potatoes to cook a short
while, and keep stirring them. While
doing this you can begin to slice the
zucchini (you may chop this but I
usually slice and then make into
halves). After the potatoes begin to
feel a little tender you can add the
zucchini and mix thoroughly. I will
usually add a little bit more water to
keep it juicy and so that the zucchini
can cook. At this point, you may also
add the can of corn (drained). It”s
great both with and without it…so
it”s up to you! Cover. Stir onions, tomatoes, potatoes, and
zucchini occasionally until the
potatoes and zucchini are tender and
cooked.

Serve a bed of rice on a plate and add
the Zucchini/Potato mixture on top! So
filling and soooo delicious!

Note:
If you have leftovers and are usually
on the run…just reheat and serve
both rice and zucchini and potatoes i
a wrap and go!
