Vegeterian Tips: Eat the rainbow! Fruits and vegetables all contain different nutrients. A simple way to remember to eat a range of vitamins and minerals is to vary the colors of the vegetables you eat. Of course, greens are always good, but try eating a rainbow of tomatoes, yellow squash and purple cabbage!

Ingredients (use vegan versions):

  • 1 large package rice candy (check ingredients)
  • 3 tablespoon non-hydrogenated vegan margarine
  • rice krispies (or granola or other cereal)

Directions:

Rice candy looks and tastes like marshmallows and can be found at most oriental supermarkets.
You can also use mochi with or without bean paste. Melt rice candy in saucepan over medium
heat stirring constantly. add in margarine. remove from heat and stir in
cereal. pour into a well greased pan. Let cool!
