Ingredients (use vegan versions):

  • 8 pears (I like organic d”Anjou), peeled, cored, and sliced
  • 3/4 cup cranberries (I like organic), whole
  • 1 tablespoon lemon juice
  • 1 tablespoon all purpose flour
  • 2 tablespoon liquid sweetener (like vegan maple syrup, brown rice syrup, corn syrup)
  • pinch salt
  • 1/2 cup all purpose flour
  • 1/2 cup oats (old fashioned)
  • 1/2 cup walnut pieces
  • 1/3 cup vegan margarine
  • 1/2 cup packed vegan brown sugar
  • pinch of salt

Directions:

Preheat oven to 375F, lightly grease a
8×8 inch baking dish. In a large bowl
mix the pears and cranberries with the
lemon juice, 1 tablespoon of flour, sweetener,
and salt. Mix just enough to coat
evenly. In another bowl mix 1/2 cup
flour, oats, walnuts, vegan brown sugar,
vegan margarine, and salt until it resembles
crumbs. I use my hands. Put the fruit
in an even layer in the pan and sprinkle
the topping over it. Bake until browned
and crisp on top and bubbly on the edges.
