Vegeterian Tips: If you know you are going to be eating at a certain restaurant on Saturday night, call ahead and ask if they offer any vegetarian entrees. If the answer is no, ask if something can be prepared for your dietary needs. Most likely, the answer will be yes.
Ingredients (use vegan versions):
- 8 soft taco size tortillas
- 2 cans apple pie filling
- 2 sticks non-hydrogenated vegan margarine (Willow Run recommended)
- 1 cup unrefined vegan suga
- 1 teaspoon cinnamon
Directions:
Preheat oven to 350 degrees. Put 1/4 of a can of apple pie
filling on each tortilla and wrap tightly. Place filled
tortillas in a 9 x 13 glass baking dish.
Melt margarine over medium heat. Add vegan sugar and cinnamon.
Simmer, stirring, until vegan sugar is completely dissolved…no
granules remaining.
Pour evenly over tortillas. Bake for 30 minutes, until
edges are lightly brown and beginning to crisp.
Great for breakfast or dessert!
