Vegeterian Tips: Most restaurants nowadays have vegetarian options available right on the menu. If not, ask your server if there is something that can be made for you. If you are at a more upscale restaurant, the chef will most likely be willing to whip up something for you, as it shows their talents and feeds their ego.

Ingredients (use vegan versions):

  • 2 cup textured soy protei
  • 1 1/2 cup cooked brown rice
  • 3/4 cup flax seed meal
  • 1/2 cup nutritional yeast
  • 1 1/2 cup ground walnuts
  • 1 1/2 cup soybean pulp (from when you make vegan soymilk)
  • 1 1/2 onions, diced
  • 2 cup veggie stock
  • Ener-G Egg Replacer, equivalent to 2 eggs
  • 1/2 cup tomato sauce
  • 1 pkg. onion soup mix
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon garlic powder and ketchup for the top!

Directions:

Mix together the textured soy protein and the veggie stock, set aside. When
all the stock is absorbed mix the textured soy protein with all the rest of
the ingredients and divide the mixture in half to fill two
loaf pans that have been prepared with non stick spray.

Cover the tops of the loaves with ketchup and bake for 1
1/2 hours at 375. Serve with vegan gravy and miso mashed
potatoes and green beans or carrots for a real blue plate
special!
