Indian-ish Lentil Soup – soup – Hope you will like this one also, it is one of the best soup. View the video also if available, and feel free to comments, share.
Vegeterian Tips: Read the sandwich descriptions on your menu. Most would be quite tasty and still filling without the meat. Just make sure to tell your server that you want to hold the chicken or roast beef, and to double up on the veggies and cheese.
Ingredients (use vegan versions):
- 2 smallish onions, chopped
- 2 cloves of garlic, chopped
- 8 cups of water
- 2 cups of lentils
- 1 vegetable bouillon cube
- 2 teaspoons garam masala
- 2 teaspoons curry powder
- 1 teaspoon turmeric
Directions:
Saute the onions and garlic in a large soup pot (I use a
little oil; I”m sure you can use Pam, water or stock if
you”re concerned about fat).
Add the remainder of the ingredients, bring up to a boil and
then turn the heat lower and simmer for about an hour,
stirring occasionally. I just cook until it tastes right.
Generally I”ll cook it covered for 30-40 minutes and then
leave the cover off until it”s done. I don”t know if that
makes a difference though.
I”m sure you can add carrots, celery or other veggies to
this but I like it with just onions and garlic. I take it
to work for lunch.
Serves: Serves maybe 6 sides or 3-4 main courses?
Preparation time: 20 min + 60 to cook
