Vegeterian Tips: There are many different options at Mexican restaurants, including burritos, tostadas, enchiladas, tacos, nachos, and veggie fajitas. Most food options can be prepared vegetarian by substituting beans for beef without a problem.
Ingredients (use vegan versions):
- 500g (1 lb) broccoli, washed
- 1 large cucumber
- 60g (2oz) non-hydrogenated vegan margarine
- 1 large onion, chopped
- 5 cups well seasoned vegetable stock
Directions:
Trim broccoli, chop finely. Peel, halve, seed and chop cucumber
Place margarine and onion in a heatproof bowl, microwave on HIGH 2 – 3 mins, covered.
Add broccoli, cucumber and stock. Stir well, cover with a lid or plastic wrap, cook on
MEDIUM (50%) power for 6 – 8 mins.
Cool, puree in a food processor or blender.
Serve, if desired, garnished with a little yogurt and chopped chives.
