Vegeterian Tips: Reduce your refined sugar intake. I ve got as much of a sweet tooth as anybody, but I try to keep it under control by using such sugar replacers as maple syrup, stevia and agave whenever possible such as in coffee and tea and indulging in the refined stuff only occasionally.
Ingredients (use vegan versions):
- 1/2 onion, diced
- 1 tablespoon chopped parsley
- 1 tablespoon garlic
- 1 bay leaf
- olive oil
- pinch of salt
- 1/2 cup “Rienzi” (Alla Napoleatana) Tomato Sauce with Peppers
- 1 cup long grain rice
- 1 1/2 cups water
Directions:
Use Med-Hi heat. Cover bottom of 3 qt. pot with olive oil. Sautee
onions, parsley, and garlic. Add tomato sauce and bay leaf. Stir for
2 minutes. Rinse rice in water to remove starch. Add water and salt.
Add rice. Stir. Bring to boil. Then reduce heat to Low. Cover pot
and simmer for 20 minutes. Remove from heat, remove cover, and let
sit for 5 minutes. Then serve!
