Vegeterian Tips: Order different side orders such as various vegetables, beans, rice or potatoes. Meatless appetizers can also be served as a part of your dinner. Just make sure to let your server know that all of those dishes will be acting as your main course and to have him or her bring out one big plate for you to eat off of. You may just have the best meal on the table, but it s up to you to allow those meat eaters eat off your plate, since you can t eat off theirs!

Ingredients (use vegan versions):

  • 1 can of Italian spiced diced tomatoes
  • 1 small can tomato paste
  • 1 white onion chopped
  • 2 cloves of garlic minced
  • 2 tablespoon of sunflower oil more or less depends on pan used
  • 1 box whole wheat penne pasta
  • 1 container of extra firm tofu, cut into bite size pieces
  • one teaspoon or shake shake of crushed red peppers
  • top off with vegan cheese of your choice

Directions:

1) Cook paste as recommended…while
waiting for water to boil and pasta
cooking proceed to step two.

2) Add oil to pan and add onion and
garlic , cook till onion is soft and
garlic is smelling wonderful.

3) Add tofu and brown and then add
diced tomatoes and paste. Stir well
cover and let simmer for 10- 15 minutes

4) When pasta is done then your sauce
with tofu is ready, place a scoop of
pasta on plate and but sauce on top
and top with vegan cheese….

5) Enjoy, reheats wonderfully
