Vegeterian Tips: If you know you are going to be eating at a certain restaurant on Saturday night, call ahead and ask if they offer any vegetarian entrees. If the answer is no, ask if something can be prepared for your dietary needs. Most likely, the answer will be yes.
Ingredients (use vegan versions):
- 1 matzo
- soymilk
- 1 big tablespoon nutritional yeast
- salt
- 1 vegan egg replacer for 1 egg
Directions:
I just made this up this morning for
Passover since I couldn”t find a recipe
for vegan matzo brei online.
Wet the matzo, break it into small
pieces and let it sit in a bowl for a
couple of minutes with a some soy milk
(about 3 tablespoons).
Beat the egg replacer and add it to the
matzo mix together with the yeast and
salt. Then, fry in a lightly greased pan.
we love yeast in my family so I like to
use a lot of it. You can add all sort of
