Vegeterian Tips: When people think of Japanese food, they think of sushi, however sushi doesn t always have to be raw fish. Cucumber rolls are available on many menus, and if there is a sushi bar available, you can ask to try different types of vegetarian rolls, such as cucumber, cream cheese, and avocado, or perhaps vegetarian tempura rolls.
Ingredients (use vegan versions):
- 1 large green pepper (or 2 medium)
- 1 large onio
- 1 large zucchini
- 1 can of stewed tomatoes
- salt and pepper (to your own taste)
- a dash of paprika
- 2-3 tablespoon non-hydrogenated vegan margarine
Directions:
Melt margarine in a large pot. Slice all vegetables and put in pot,
get the margarine on ”em good then add stewed tomatoes and salt,
pepper and paprika. Allow to simmer for 15-20 minutes, depending on
how crunchy you like the veggies!
Serves: about 5.
Preparation time: 25 minutes.
