Vegeterian Tips: When Vegetarian Being a vegetarian is not always easy, especially when dining out at restaurants with your carnivorous friends. Since you can t always eat at vegetarian or vegan restaurants, here are some tips to read, meant to make your dining out experiences that much better.

Ingredients (use vegan versions):

  • 4 to 6 cloves of garlic (depending on your love of it)
  • 10 fresh bazil leaves
  • 2 cups tomato puree (tom.sauce may be used also..it”s just thinner)
  • 1/2 pound spinach leaves (1 bunch usually)
  • 1/2 cup chopped fresh parsley
  • 1/4 to 1/3 cup of olive oil (the recipe calls for 3/4 cup!!!you can reduce it to at least 1/3 though)
  • (for an optional fresh taste…add a roma or two)

Directions:

This recipe is basically free from any cooking…though you may wish
to saute the garlic before putting it into the blender or food proc.
Mince the garlic into the blender. Pour the tomato puree into the
blender. Clean, dry, and stem the spinach leaves and place them in
the blender a small handful at a time. Begin to puree the mixture a
little bit at a time so you do not clog the blender up. If you do,
then just move the mixture around till the desired puree is achieved. Proceed with the rest of the spinach until it is all in and pureed. Oh yeah…add the oil at the time of the tomato puree. Now you can add the parsley and basil. You can also experiment at this time by tasting it!! it”s great cold and will give you an accurate account of what it may need to you. I happen to love it with just these ingredients and maybe a couple of nice roma tomatoe”s to give it a fresh zip! Pour the sauce from the blender into a saucepan. Heat through and through. The longer you cook it….the less garden-like it may taste. I suggest just heating it long enough to get it hot. Toss with any pasta!!!! ….enjoy!!
