Ingredients (use vegan versions):

  • large Spanish onio
  • 2 cans chickpeas (Put 1/2 Cup Liquid Aside For Later Use)
  • whole tomato or 1/2 cup canned tomomatos
  • 1/2 teaspoon lemon juice
  • 3 cloves garlic (press)
  • 2 tablespoon finely chopped ginger
  • 2 tablespoon coriander
  • 1/4 tspn cayenne
  • 1/4 tspn black Pepper

Directions:

Brown Onions in water (Can be done in very small amnt of oil also) Add
ginger and garlic Cook 2 min. Add all spices except salt Cook 1 min.
Add tomatoes Cook 5 Mins Add the liquid from the chick peas Add 1/2
cup water and lemon juice Cook 10 mins Add chick peas Cook 10 mins Add
salt to taste.
