Vegeterian Tips: Eat the rainbow! Fruits and vegetables all contain different nutrients. A simple way to remember to eat a range of vitamins and minerals is to vary the colors of the vegetables you eat. Of course, greens are always good, but try eating a rainbow of tomatoes, yellow squash and purple cabbage!

Ingredients (use vegan versions):

  • 4 cups filtered water
  • 2 tablespoon loose leaf tea (earl grey/orange pekoe etc.)or tea bags
  • 1 cinnamon stick or powder to taste- a little goes a long way
  • 4 cardamom pods, lightly crushed to break pod
  • 4 thin slices peeled, fresh ginger (or dash powdered)
  • 7 or 8 black, pink or white peppercorns
  • Sweetener ( vegan sugar or succane)to taste
  • Fennel seed (optional for those who like a licorice taste)
  • 1 cup soya milk or less or more to taste

Directions:

Boil water in a saucepan. Add spices and simmer 5 to 6
minutes. Add tea and steep for 1 to 2 minutes. Strain.
Heat soymilk separately but do not boil. Sweeten soymilk to
taste. Add strained tea to soymilk. Stir and serve in warm
cups. Drink and enjoy.

Use your imagination with the spices and the tea. Different
combinations yeild different taste sensations. Treat
yourself and use fresh ginger rather than the powdered – It
adds a freshness that is really delightful.
