Vegan Crepes

Vegeterian Tips: Water water water! It s been said over and over again for a reason because its true! Most people don t drink nearly enough. Bring a water bottle with you wherever you go and invest in a simple filter for your home. Water is especially important when adjusting to a new way of eating, as it will help curb any cravings you may experience.

Ingredients (use vegan versions):

  • 1 cup unbleached flour
  • 1 1/2 cups soy or rice milk
  • 3 teaspoon Ener-G (Ener-G Egg Replacer) mixed with 4 tablespoon water
  • 2 tablespoon vegetable oil
  • dash of vanilla

Directions:

Pour flour in a large bowl. Mix with egg
replacer mix and rice or soy milk. Mix with whisk
until lumps are gone. Add vegetable oil and
vanilla.

(Note: The cooking takes a little practice, but
once you get it everything turns out awesome)
Spray pan with some non-stick type spray, heat
at medium to low. Ladle batter into pan. Let it
cook for about 2 minutes, then with two hands
shake it a little so it comes loose, and flip
it. Cook the other side for another minute or
two, and serve.
