Vegeterian Tips: When people think of Japanese food, they think of sushi, however sushi doesn t always have to be raw fish. Cucumber rolls are available on many menus, and if there is a sushi bar available, you can ask to try different types of vegetarian rolls, such as cucumber, cream cheese, and avocado, or perhaps vegetarian tempura rolls.

Ingredients (use vegan versions):

  • 1 1/4 cup hot water
  • 1 tablespoon vegan brown sugar
  • 1 cup oatmeal
  • 2 to 2 1/4 cups whole wheat flour
  • 1 tablespoon vital glute
  • 1& 1/4 teaspoon yeast
  • 2 teaspoon canola oil
  • 1 teaspoon sea salt
  • 1 tablespoon sunflower seeds

Directions:

Put water, oil and vegan sugar in the bread machine. Add the
oatmeal and let it sit for five minutes. Add 2 cups of
flour. Make a well in the middle of the flour for the yeast
and carefully add the salt around the edges.
Turn on the bread machine, (Use a setting for 1.5 lb. loaf,
dark if you have it.) If the dough seems too sticky, add
additional flour as required. When you have a nice dough
going, add the sunflower seeds.

This is a sturdy loaf, very nourishing. Great with salads,
soups, as sandwiches or toasted with jam. In the winter,
spring, summer, fall…
