Vegeterian Tips: Reduce your refined sugar intake. I ve got as much of a sweet tooth as anybody, but I try to keep it under control by using such sugar replacers as maple syrup, stevia and agave whenever possible such as in coffee and tea and indulging in the refined stuff only occasionally.
Ingredients (use vegan versions):
- 1 large green pepper, coarsely chopped
- 1 teaspoon minced garlic
- 2 cans (16 oz) undrained black beans
- 1 jar (4 oz) sliced pimientos
- 3 tablespoon vegan red wine vinega
- 1/2 teaspoon oregano
Directions:
Saute pepper and garlic in liquid of your choice 3-5 mins, until”
tender-crisp. Stir in remaining ingredients, bring to boil, simme
5-7 mins., till tender. Serve with rice. (Adapted from Woman”s Day,
