Vegeterian Tips: Many upscale food chains have either one or the other, or both salad and soup bars. Salad bars are great for vegetarians, but be careful not to overload on dressings, croutons, nuts, or cheese. Be sure to check with your server about the soups available and that they are bean based, with no meat. If there is nothing else available, salad and soup bars can make a hearty and tasty meal.
Ingredients (use vegan versions):
- 2 potatoes (I use all-purpose)
- 1 medium onio
- 1 clove garlic
- Olive oil
- Salt and pepper
Directions:
Bake the potatoes. [I do mine in the microwave — 6-8 min
on high turning halfway through. The oven is fine too. You
can even use leftover baked potatoes from last night”s
dinner!]
While they are baking, dice the onion.
Put about a tablespoon of oil into a frying pan over medium
high heat. Add the onion.
Dice the potatoes, and then add them to onion in the pan.
Peel the clove of garlic and either cut it up very small or
put it through a garlic press and add it to the potatoes.
Let the potatoes cook until the side they are on gets crusty
brown — anywhere from 3-10 minutes, depending on the heat
you are using. Then turn and wait again. Don”t stir in
between! If you don”t know how long it will take, use a
fork to stab one piece and check the bottom side. Add more
oil if needed.
Turn one last time, and wait for another side to brown.
Sprinkle with salt and pepper to taste, mix and serve with
salt or ketchup.
