Black Bean Fritters

Vegeterian Tips: Keep your favorite salad dressings on hand. I find that I m much more likely to eat my greens or some raw veggies when my favorite salad dressings are in the fridge. A little variety is great too I try to keep at least two kinds, either store bought or homemade on hand at all times. Some of my favorites are homemade goddess dressing, Thai peanut sauce from my local Asian grocer and rasberry vinaigrette. A vegan ranch dressing was helpful as well when I was trying to wean myself off dairy.

Ingredients (use vegan versions):

  • 2 cans black Beans, drained
  • 1/2 to 1 cup green onion chopped fine
  • 2-4 cloves garlic minced fine
  • 3 tablespoon cilantro chopped fine
  • 1/2 teaspoon cumi
  • 1/2 teaspoon oregano
  • 1/2 teaspoon rosemary
  • 1/4 salt (optional)
  • 1/4 pepper
  • 1 cup brown rice cooked
  • 1/2 cup corn meal
  • olive oil or vegetable oil for frying

Directions:

Mash or puree 1 can black beans and add
second can to mashed beans. Add next 8
ingredients (up to pepper) to mixture
and mix through. Add brown rice and mix
well, then add corn meal and mix well.

Heat oil in pan over med-high heat.
Take enough of the mixture out to form
a large “meatball” and repeat until all
the mixture is gone. Add them to the
oil one at a time and fry until all
side are crisp. Drain on a paper towel.

These can be put into pitas with
lettuce, shredded carrots, cucumbers,
etc and topped with salsa, or a tofu
sour cream.
