Vegeterian Tips: Take a vitamin supplement that contains B12 or include nutritional yeast in your diet regularly, especially if you re vegan or mostly vegan.
Ingredients (use vegan versions):
- 1 large can of tomato or V8 juice
- 1 med jar of salsa (Ex: hot, mild, etc)
- 1 large onion chopped
- 2-3 cans of any veggies you like (beens, corn, asparagus, etc)
- or 3-4 cups of chopped fresh veggies (fresh will add to prep time)
- spices or fresh herbs to taste (cilantro, garlic, salt, black or red pepper)
- 1tablespoon of oil
Directions:
In a large stew pot place oil and onions(mushrooms optional)
saute till onions start to soften (1-2 mins)
Add in tomato juice, all canned veggies, and salsa.
Optional herbs and spices add in at this time.
Bring soup to a boil the reduse heat and simmer for about
10 mins. Taste and season as necessary.
