Vegeterian Tips: Eat a dark green vegetable broccoli, spinach, kale, collard greens at least three times a week. These nutritional powerhouses are packed full of vitamins such as calcium and iron. Ingredients (use vegan versions):

  • 1/2 teaspoon salt
  • 1 cup tomato
  • 2 15 oz cans black beans. Drained and rinsed.
  • 1 16 oz can white shoe peg corn. Drained.
  • 6 tablespoon lime juice
  • 6 tablespoon olive oil
  • 1 1/2 teaspoon ground cumi
  • 1/2 cup red onion. Chopped fine.
  • 1/4 cup fresh cilantro

Directions:

I use my food processor for the tomatoes,
cilantro, and the red onions because I am lazy.
Combine all but the tomatoes until you are ready
to serve it, then add a little more lime juice.
This is really good with lime flavored chips.
